Hi everyone, and welcome to Beet The Rush! My name is Sofia and I’m from Portugal. I share cozy, homemade, vegetarian recipes, as well as my experiences traveling as a vegetarian.
I will tell you my history with cooking and food in a moment, but first, let me share with you what you will find on this site.

On this site, you will find cozy homemade vegetarian recipes developed by me (unless clearly stated otherwise). I’m not a Chef (more on that later!), so my recipes are not technical or complicated. I describe my food as lazy but effective!
By vegetarian, I mean ovo-lacto vegetarian: some recipes will contain eggs, dairy products, and honey. You can also expect some vegan recipes, with no animal products at all.

Food is a big part of traveling! As vegetarians, eating while traveling may require a bit of extra planning.
As I usually search for suggestions and recommendations myself, I thought it might be useful to share my experiences with vegetarian food while traveling.
On this site, you will find where I’ve been and what I ate there. Also, I love hiking, so expect some hiking snacks!
How did I become interested in cooking?
I have shown an interest in cooking from a very young age. As a kid, I loved to open the kitchen cabinets and play with the pots and the pans, pretending to cook. According to my mother, that always kept me entertained for a long time.
I don’t really remember this, but I do remember, a bit later, playing TV cooking show host! To this day, I’m an avid consumer off all kinds of cooking shows.
I have always been curious about cooking, but since adopting a vegetarian diet, I found a renewed interest in food. I knew a couple of vegetarian recipes, but not enough to get by. So I had to create new recipes and recreate vegetarian alternatives to old favorites!
As I’ve told you, I’m not a Chef. I have a Masters Degree in Clinical Psychology and I specialize in Neuropsychology. My interest in food is purely from an amateur standpoint. Even though I find culinary art absolutely fascinating, I want simple (mostly lazy!) homemade food in my kitchen. And that’s what you will find at Beet The Rush! I hope you enjoy it!
A Quick Note On Salt
I’m a big fan of salty snacks (hey chips, looking at you!), but that’s about how far my love for salt usually goes! When it comes to cooking, I find my food tends to be less salty than what I eat in restaurants. I recommend you always taste your food while cooking, you’ll likely find some recipes will need a bit more salt.
Are You Considering Adopting A Vegetarian Diet?
Although delicious, vegetarian diets may be restrictive, and require careful planning to avoid nutritional deficiencies. I am not a dietitian and by no means am I an expert in what vegetarians should eat. The recipes I share are based on my personal opinion on what makes vegetarian food delicious.
If you’re considering a vegetarian diet, make sure you research it carefully, from credible sources. And, when in doubt, ask an RD or an MD. Here’s an article I found helpful.
