Easy And Creamy Spinach Pasta Bake


This creamy spinach pasta bake is, in my opinion, the definition of comfort food! It’s easy to make, with simple ingredients you probably already have in your home. Also, it’s creamy and covered with molten golden cheese!

But, you may ask, is this glorified mac and cheese? Probably… Am I still calling it fancy? Well, sure! Whatever you call it, I hope you try this recipe and enjoy some comforting pasta!

Here’s how you do it!


Start by boiling the water for the pasta. Meanwhile, peel and slice one onion and two garlic cloves.

I don’t mind big bits of garlic and onion, I actually like them, but you may mince them if you’re bothered by the big chunks.

When the water starts boiling, add the salt and the pasta. I usually use macaroni or penne. But you will probably get away with using other short-cut pasta. Just go for your favorite, or whatever you have at hand! Cook according to the instructions in the package, maybe for a minute or two less if you like the pasta al dente!

TIP: Don’t forget to give it a stir, or it will catch to the bottom of the pan. You don’t have to keep stirring the pasta, just the initial stir ill be ok.

Saute the onion and garlic over medium heat along with a tablespoon of olive oil for about 5 minutes.

Yes, you may use another type of oil, just don’t tell me! I will pretend you’re using olive oil, and we can still be friends!

Add the frozen spinach, cover the pan with a lid, and cook for about 10 minutes. I’ve never used fresh spinach in this recipe, but if you do, maybe cook them for a bit less, just until they’ve wilted.

The seasoning for this recipe is really simple: salt, nutmeg, and pepper.

TIP: As far as the nutmeg goes, be careful to start with less than specified if you’re not used to it. I’m a big fan of nutmeg, but it can be a bit strong if you’re not used to it!

Mix in the soy cream, 1/2 a cup of mozzarella, and the drained pasta.

Transfer to your baking dish and sprinkle the remaining 1/2 of a cup of cheese on top of the pasta.

Bake at 200 degrees celsius until the cheese is melted and golden. It takes me about 10 minutes but depending on your oven, it may take a bit more, or less. Just keep an eye on it!

A note on portions: I say this serves four people, but if you’re cooking for hungry people, this may serve three or even two. You may have to double the recipe! And, if you end up with some leftovers, this is still delicious the next day!

Ingredients

  • 1 cup short-cut pasta

  • 1 onion

  • 2 garlic cloves

  • 1 cup frozen spinach

  • 200 ml soy cream

  • 1 cup mozzarella

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/2 teaspoon nutmeg

Directions

  • Cook the pasta cording to the package instructions.
  • Peel and slice the onion and the garlic cloves. Saute them over medium heat along with the olive oil for 5 minutes.
  • Add the spinach, cover the pan with a lid and let it cook for 10 minutes.
  • Preheat the oven to 200 degrees celsius.
  • Season the veggies with salt, nutmeg, and pepper.
  • Mix in the soy cream, 1/2 a cup of mozzarella, and the drained pasta.
  • Transfer to your baking dish and sprinkle the remaining 1/2 of a cup of cheese on top of the pasta.
